I personally use Photoshop to create panoramic images such as San Juan and Seven Seas Beach but as I found out in this Stitching Panoramic Photo thread, you can also use various, powerful software packages to complete the job. Here are a few packages that will stitch panoramic photos together for you.

Panorama Factory
PTGui
PTAssembler
PTOpengui
